Sweet Potato Coconut Veggie

Ingredients

  • 1 small sweet potato (steamed or boiled)
  • 1 small carrot (steamed or boiled)
  • Can use Mixed vegetables puree of choice (steamed or boiled) 
  • 1 tbsp fresh grated coconut and 1 cup water (for
    making coconut milk)
     
  • 1 tbsp Maaiee Organic Oats Cereal 
  • Vegetable broth or warm water (to adjust
    consistency)
  • Ghee (for serving)
  • Cooked rice or dosa (optional, for pairing)

Instructions

  1. Steam or boil sweet potato with carrots until fully soft.  [You can use Steam vegetables of your choice — either mixed or one at a time, depending on baby's stage and tolerance.]
  2. Make coconut milk by grinding 1 tbsp fresh grated coconut with 1 cup water. Strain to extract milk.
  3. In the coconut milk, add 1 tbsp Maaiee Organic Oats Cereal and cook until it reaches a smooth porridge consistency or blend
  4. Add the vegetable purée (from sweet potato, carrot, or other steamed vegetables) into the cooked oats.
  5. Adjust consistency using vegetable broth — make it thicker for porridge or thinner for soup.
  6. Serve warm, topped with a little ghee.
  7. You can also serve with soft dosa pieces or mashed rice.
